Marinated Grilled Chicken
I love the grill! #1 reason – less dishes to wash! Seriously, that’s my main reason for using it. If I could use it year round and for every meal, I would.
Today, I’m teaming up with a bunch of other bloggers to bring you budget friendly meals. Who doesn’t want more of those? I know I do.
This marinated grilled chicken recipe is not only budget friendly, but easy and enough for 2 – 3 meals for a family of 5 with 2 teenagers and a tween.
I started with a 5 pound package of chicken breasts at $1.99/pound. That’s $10 people. I normally buy it in this size of package for the savings and put what I don’t need in the freezer or make it all up at once and have plenty of leftovers which saves me time later in the week. This recipe is great reheated, used in another recipe, or served cold on salads.
Then I bought 2 packages of mesquite marinade (you could use whatever flavor or brand you like, McCormick’s just happens to be my fav) for $1.18/each. Add in the oil and water and you have intense flavor for less than $3.
So if my math is correct, for about $13, I can feed my family of 5, three meals of chicken because that is what I normally get out of it. That’s $4.34/meal or $.87/serving of meat. Not too bad peeps, not too bad. Add on a side of rice, a veggie, and a slice of warm bread and I’d guess for less than $1.75/person, you have yourself a pretty budget friendly meal.

Marinated Grilled Chicken
Marinated grilled chicken is one of my most favorite meats to make. I love changing up the marinade flavor. It's economical and easy to make.
In order for the marinade flavor to work its magic, make sure you let the chicken sit in it for at least 2 hours but no longer than 24.
If you don't have a grill or it's too darn cold out or raining, this recipe is great in a pan or the oven as well.
Yield: 12 - 15 servings
Prep Time: 2 hour- 24 hour
Cook Time: 25 min
Total Time: 2 hour 25 min - 24 hour 25 min
- 5 pounds chicken breasts cut into strips
- 2 packages McCormick Grill Mates Mesquite Marinade (or your favorite flavor) and the ingredients to make it up.
- Cut chicken breasts into strips.
- Make up marinade according to package directions.
- Put chicken in a plastic sealable bag or a container. Pour marinade over chicken and make sure it is all covered.
- Seal up container. Place in refrigerator for at least 2 hours or up to 24.
- When you are ready to grill, turn grill on to medium heat for gas or indirect heat for charcoal.
- Grill chicken for about 20 minutes, turning every 5 minutes.
- Serve hot off the grill!
- Leftovers are great warmed up or served cold on a salad.
