Oh, oh, oh – I’m so excited to introduce you to the very first EVER recipe winner of the Quick Summer Meals Contest.
Now for those of you who know my family you may think – WTH? They liked this? And I will say that yes, 3 out of 5 of us liked it. The other 2 don’t count because one of them is pickier than picky and the other one likes something one minute and then the next doesn’t. This just happened to be a minute that she didn’t like noodles with sauce.
So congratulations to Lilias from Shrewsburry, MA for her winning Sesame Noodles recipe. Lilias told me she likes to serve this either hot or cold and I’d have to say, I preferred it cold (leftovers are great!). I liked the way the flavors of the sauce came out better when the noodles were cold and sunken into the chicken. I also really liked the little crunchiness that the sesame seeds added. We served it with a side salad and some crusty artisan bread for a full meal.
This recipe – when made with the portions below – will feed a crowd. I made half of this recipe and we had enough for at least 6 – 8 servings so double that and you’d easily have enough to feed about 15 so it would be a great meal to make up and have plenty of leftovers or to take to a pot luck. And I made it all in 25 minutes. Who doesn’t love that?!

This recipe tastes great served cold or hot. It feeds a crowd so make it for your next pot luck or have plenty for leftovers.
1 pound cooked angel hair pasta
2 cooked chicken breasts, cubed or thinly sliced
1/3 cup soy sauce
1/3 cup rice vinegar
3 garlic cloves, pressed
3 Tablespoons honey OR dark brown sugar
1 teaspoon red pepper flakes (optional)
1/2 teaspoon powdered ginger
1/3 cup sesame oil
3 green onions, thinly sliced crosswise
1 large carrot, grated
large handful fresh cilantro, chopped
2-3 Tablespoons sesame seeds
1. Boil water and cook angel hair pasta according to directions.
2. At the same time, cook your chicken if it isn’t already cooked up. Cut chicken breasts up into smaller pieces for faster cooking.
3. While pasta cooks; whisk soy sauce, rice vinegar, garlic, honey, red pepper flakes, and ginger. Continue whisking, while drizzling sesame oil until thoroughly combined. Set aside.
4. Chop green onions and cilantro, grate carrot.
5. Once noodles are cooked, rinse quickly in cold water, until cool to touch and place in large bowl.
6. Pour dressing ingredients over noodles and toss.
7. Top with chicken, green onions, cilantro, carrots and sesame seeds.
Can be served immediately at room temperature, or chilled overnight.
Any fresh veggies can be substituted or used in addition to the carrots. Use whatever is handy!
