Refreshing Oreo Brownies

Happy Belated Mother’s Day to all of you mums out there.  I hope you had a wonderful day filled with love and laughter and kids that behaved all day long! 

My youngest is in second grade and one of the things I will miss most when she leaves elementary school is the thoughtful handmade Mother’s Day gifts she will bring home.  My most treasured possessions are not my Hummels or my gold necklace – it’s the handmade gifts my kids have given me throughout the years.  Those cute little sayings attached to a small, inexpensive gift always make my eyes swell with tears in an instant – and that’s not easy to do.

This year, I received all homemade gifts from my kids.  Even though the two older ones are long out of elementary school, they made me gifts on their own.  My oldest made me this beautiful origami crane with a sticky note attached.  The crane has writing all over it – “I love you” – in all different languages.  Thank you Rachel!

My son spent time on his iPod (nothing new there), not playing a game but using building blocks on the MineCraft app that says Happy Mother’s Day Mom on it.  He only has the free version and couldn’t save it so I don’t have a picture but it was super cool!  Thank you Ryan!

And my youngest brought home a pretty little flower and a blinged out garden stone with her handprint on it.  Thank you Alyssa!

These are the thoughtful gifts I love and will treasure forever.  I’m grateful to be their mom and very lucky to have them as my kids.

Not only do I have great kids, but I also have three beautiful ladies that have taught me how to be a good mom.  These ladies have taught me what unconditional love is.  They taught me how to work hard, how to love your children and how to respect others – amongst many other things.  So Happy Mother’s Day to my mom, my step-mom and my mother-in-law!  I couldn’t have asked for three better women to be my role models in raising kids.  You all bring something different to the table that I have been able to learn from.  For that I’m forever grateful.  Love ya all!

Now onto the sweet reason you came today.  This divine, refreshing brownie. 

Start with a regular brownie mix, add in some crushed up Oreos.  Bake as directed.

 

Then onto the best part – the frosting.  Take some cream cheese – I used whipped because I wanted it to be a little bit airier but you could use regular if you wanted.  Add some powdered sugar.  Fold in some Cool Whip and more crushed Oreos.  Spread over the cooled brownies.  Top with more crushed Oreos and you have yourself a pimped out brownie that is very refreshing.

Maybe you can’t make an origami crane or a building block message or a blinged out garden stone but you can certainly make this for any special occasion or just because it’s Tuesday.  That’s special enough for me.

Refreshing Oreo Brownies

This is a refreshing version for your brownies. Perfect to serve on a warm day.

Yield: 24 - 30 servings

Prep Time: 15 minutes

Cook Time: 35 - 40 minutes

Total Time: 1 1/2 - 2 hours

Ingredients:

• 1 box fudgy brownie mix – with ingredients to prepare them according to the package directions
• 1 (16.6 oz) package Oreo cookies divided equally into thirds all coarsely chopped
• 8 oz of whipped cream cheese – block cream cheese can be used as well
• 2 cups powdered sugar
• 6 oz of Cool Whip

Directions:

1. Preheat oven to 375 degrees.
2. Coarsely chop the Oreos in three different batches. I put mine in a Ziploc bag and pounded with a rolling pin a few times.
3. Prepare brownie batter according to package directions, folding in 1/3 of the chopped Oreos.
4. Bake according to package directions for fudgy brownies.
5. Let brownies cool completely.
6. With your mixer, beat the whipped cream cheese and powdered sugar until combined and smooth.
7. Fold in the Cool Whip with a spatula and another 1/3 of the coarsely chopped Oreos.
8. Spread the frosting mixture on top of cooled brownies.
9. Sprinkle the remaining Oreos on top of frosting
10. Refrigerate for at least 30 minutes or until ready to serve.

Refrigerate any leftovers you have.

    OK, wow, coincidence – *my* kid (same age as yours, I think) gave me a rabbit origami creature for Mother’s Day. And I agree – time is the most important gift you can give – whether it be making something, or spending time figuring out what I like, or time shopping for it, or baking it, or what-have-you…it’s the TIME you give that is so special. So all your cooking is not only yummy, but it is good because you spend TIME on it. IMHO.

    This would be a great mom and daughter bonding activity. Yum! My sister is pregnant and I would like to give her a post mother’s day treat, she is totally an oreo fan and I am sure she will love every crumb of this. Thanks for the post.
