Carrot Pound Cake?
Does Carrot Pound Cake sound appetizing to you? Me neither.
But wait! How about pound cake dipped in chocolate to LOOK like carrots? Does that sound better? Thank goodness – it does to me too.
You don’t have to worry about finding hidden vegetables in my sweet recipes. I leave that to my mother-in-law. She puts zucchini in almost everything! You never know what you’re going to get there. Most of it tastes pretty good but you don’t dare tell the kids or the men there are vegetables hidden in their sweet food – they won’t trust you for weeks after that.
We are planning our garden for this year and decided to expand it. Call us crazy because we are. I plan to share our garden adventure with you throughout the spring/summer/fall. We are basic people. Corn and potatoes and then salsa ingredients – tomatoes, peppers and onions. Oh and weeds. There are always lots of weeds in our garden. Just so you know – we don’t plant weeds. They come uninvited and usually stay for most of the summer. And last year, we had potato bugs. I hope they moved this year because they were really, really gross.
As you can see from the photo – we are expanding it by a couple of feet on 2 sides. But one thing you won’t find in our garden this year is carrots. We have very rocky soil and the carrots always came out looking like aliens so we decided to skip them again this year.
So instead, I’m making pound cake carrots because I know these won’t look like aliens unless we want to make them look like aliens that is.

Pound Cake Chocolate Covered Carrots
Yield: About 39 carrots
Total Time: 30 minutes
Ingredients:
16 ounce Sara Lee Pound Cake – frozen
16 ounce bag of orange candy melts
Green Laffy Taffy or green Tootsie Rolls
Nonstick mat or parchment paper
Toothpicks
Crushed up Oreos - optional
Directions:
1. Cut the pound cake into 3/4 inch slices.
2. Cut the 3/4 inch slice of cake diagonally so you have 3 triangles of various sizes.
3. Melt the candy wafers according to your package directions until smooth.
4. Put a toothpick in the end of the pound cake triangle and dip into the melted candy wafers.
5. Tap off excess chocolate.
6. Lay on a nonstick mat or parchment paper to set.
7. Once you have all of the “carrots” dipped, place some left over chocolate into a small Ziploc bag and snip a small hole in one end. Squeeze little lines onto the carrots to give them more dimension.
8. For the greens of the carrot, roll a Laffy Taffy into a ball. Place the ball onto a nonstick mat or a piece of parchment paper. Lay another piece of parchment paper over the ball and use a rolling pin to flatten in out.
9. Cut a straight line off the bottom of the taffy.
10. Slice or cut lines about half to 2/3 of the way down starting at the round end going towards the straight edge.
11. Roll the Laffy Taffy up and then separate the ends to make it look like a carrot top.
12. Sprinkle crushed up Oreos on the plate before serving to make it look like dirt.

Amazing and incredibly cute. And do they even last long enough to put into the Oreo “dirt”? Cuz I can’t imagine them lasting that long in my house. I can’t even imagine the Oreo’s lasting long enough to *become* “dirt*. But this is really cute and perfect for any Easter “bunny”! (P.S. Carrot aliens also sound quite fascinating.)
These are really cute. Perfect for Easter or just for Spring. My husband hates it when I try to make sweets healthy, too! I tried to make everything with whole wheat flour years ago and he’s still suspicious 😉

Hi Sarah – I would say you could easily make them up a few days in advance and keep them in an airtight container. As long as the chocolate covers the entire cake – the cake is sealed and shouldn’t go stale. Don’t make up the laffy taffy stems though until the day of the event. I found out the hard way that they got really sticky when I made them up 2 days in advance. Green tootsie rolls make work differently. I also know there is edible grass out there – I couldn’t find it, but that would work as well. Good luck!

I made the carrot pound cake for Easter and it was AMAZING! I have to be honest, I had never had pound cake before and boy was it good! I was wondering if you have any other creative recipes that use pound cake and chocolate melts? Besides carrots, what other themed deserts have you made out of pound cake?

I know – who would have thought pound cake + chocolate = AWESOMENESS! I will be honest and say I haven’t made anything else other than these carrots but I do have a few ideas in my head that I plan to share on my blog in the upcoming months. So stay tuned.
