Nostalgic Garlic and Herb Butter
Do you ever hear something; see something; smell something; read something that takes you back in time? Oh how this recipe takes me back about 20 years. It brings back memories of when my hubby and I were just newlyweds living in Germany. (Gosh that makes me sound/feel really old.) We lived there for 3 years and had some of the best food, beer and wine we’ve ever experienced.
I was going through one of my German cookbooks last week. It’s German food but thankfully the cookbook is written in English. Had it been written in German, I’m not sure what I would be sharing with you today since “mein Deutsch ist nicht sehr gut“. Man how I wish Google Translator was available back then.
There are a few recipes I have highlighted in this book and one of them is krauterbutter. Easy English translation – herb butter. I remember it being served on a cooked-just-so-right steak. Oh the slab of butter and herbs just added so much to the taste. My mouth can seriously taste that butter right now. Isn’t it weird how one thing can take you back in time and it feels just like yesterday that it happened?
So last week I decided I wanted to go back 20 years and experience that herb butter again. Or, maybe I just wanted the memories of the good beer that went along with the meal as well as the great conversations with newly made friends. No matter what, it worked. I was taken back to the early 90’s living in Germany. Big hair and all! Good times!
I altered the recipe a little by adding some garlic mainly because
a) I love garlic
b) It keeps vampires away and
c) I knew it would add to the flavor.
But instead of putting it on a nice big juicy steak, we added it to baked salmon, baked potatoes and some French bread. It was so good! The little slab of butter melted right into the salmon and the garlic and herbs added just the perfect amount of flavor needed to each of these dishes.
I don’t know why it’s taken me so long to make this but now that I have, it will be a staple in this house.

Garlic and Herb Butter
What a nice compliment to almost any dish. Serve it on steak, chicken, fish, potatoes, rice or bread. Would also make a very nice homemade gift to give to someone.
Yield: 1/2 pound of flavored butter
Prep Time: 10 minutes
1/2 cup butter, softened
2 cloves garlic, finely chopped
1 – 2 tsp parsley
1 – 2 tsp chives
1 – 2 tsp basil
*herbs can be fresh or dried
1. Mix all ingredients together until well blended either by hand or with a mixer.
2. On a piece of wax paper, put the butter mixture in the middle.
3. Fold the wax paper over and gently mold into a log or rectangle.
4. When you have your desired shape, fold the wax paper around the butter and refrigerate for about 1 hour to let the butter set again.
Store in an airtight container so the aroma of the herbs don’t affect the food around it.
Use on breads, potatoes or meats of your choice.
