Has anyone else looked at their December calendar and wondered how you are going to fit everything in this month that needs to be done? There are school concerts and sporting events. There are company, family and church Christmas parties. And don’t forget the decorating, baking, shopping and wrapping that you need to do too.
And then the one thing everyone in the house is still expecting with this busy schedule – dinner every night. Well I can’t help you with the shopping and wrapping, but I can help you with what to make for dinner.
I love my crock pot. I don’t use her nearly as much as I should. She’s so easy to deal with. You just put your food in, turn her on and in and 4 – 8 hours, your food is magically waiting for you. Easy! So when we have busy days, weeks or months like the calendar is showing right now, turn to your crock pot for a little help.
This pork roast is one of my stand by favorites. The roast itself is reasonably priced. The seasonings are staples in the cupboard and you can top it with many different sauces to suit your tastes. Gravy and BBQ are our favorites.
Put your pork roast in your crock pot. I used a sirloin roast this time around because they were on sale. Add some seasonings – whatever you like. I used seasoning salt, pepper, garlic powder and onion powder. If you have an onion or garlic in the house, feel free to cut those up and put them right in too.
Turn her on to Low if you want her to be cooked in 7 – 8 hours, High if you want it done in 4 – 6. Just make sure you test the meat with your meat thermometer before you take it out. For pork, it needs to be at least 170 degrees to be done. When your roast is done, take it out and place on a cutting board. I like to slice mine up a bit and allow it to cool for about 5 minutes before I shred it with my hands. Once cool, just take your hands and pull the pork apart into small bite sized pieces.
Add your sauce and thoroughly cover the meat. Reheat. Serve on buns, noodles, mashed potatoes, or just a heaping amount on your plate.
So, relax a little. You have one meal already planned out for you. Or better yet- make up a big roast or a couple of smaller ones and shred it all up at once and store in the freezer what you won’t use the first time around. Pull it out next week and add a different sauce. Your family will then have 2+ quick meals all ready for them and you will have extra time to fit in that last minute shopping.
Crock Pot Pork Roast
Yield: 6 servings
Prep Time: 10 minutes
Cook Time: 4 - 8 hours
Total Time: 4 - 8 hours
1.5 - 2 pound pork roast
1 tablespoon seasoning salt
2 teaspoons pepper
2 teaspoon garlic powder or 2 cloves pressed fresh garlic
2 teaspoon onion powder or 1 medium sliced onion
1. Put pork roast in crock pot.
2. Add seasonings.
3. Turn crock pot on Low for 6 - 8 hours or High for 4 - 6 hours.
4. Test for doneness. 170 degrees for pork.
5. Put pork onto cutting board, slice and let cool for 5 - 10 minutes.
6. Shred pork with your hands into bite sized pieces.
7. Cover with your favorite sauce - gravy, bbq, sweet and sour, etc.
9. Serve with noodles, mashed potatoes, on a bun or just on your plate.
