Candy Cane Chocolate Covered Popcorn

WARNING!!!  This recipe can be addicting.  Not intended for the weak willed chocolate/popcorn/peppermint lover.  Read at your own risk.

There are many variations of this recipe that can be made but today, in honor of the holly, jolly season we are in, I’ve made some Candy Cane Chocolate Covered Popcorn.  It all starts with Wilton’s Candy Cane Colorburst Candy Coating Chocolate.  It’s pretty darn good.  Love the little bit of candy cane crunch it has yet it’s not overbearing at all.

Once you have that, you need some popcorn.  Any kind will do.  Microwave.  Air popped.  Oil popped.  Buttered.  Lightly Buttered.  Salted.  Unsalted.  Popped on the stove.  Popped in a popcorn maker.  Movie theater popcorn.  I kind of sound like Bubba Gump only substitute my popcorn for his shrimp.  And I don’t have as big of a bottom lip as he does.

Combine the two of these ingredients together and top it all off with some M&Ms because almost everything tastes better with M&Ms. And if you have any cute little cookie accents like candy canes or light bulbs, add those too just to please the eye.  It’s heaven by the handful!

This is one of those special recipes that you can easily bag up and give as a gift to anyone and they will think you are the Top Dog.   That is, if there is any left to give.  But, beware, like I said, it can be addicting.  Therefore, if you give it to someone, and they become addicted, you are now a chocolate popcorn dealer.  I don’t think it’s against the law, but, just beware that for every occasion from now until the day you die, your recipient WILL expect a bag full.  So stock up on that candy coating for the addict in your life.

Candy Cane Chocolate Covered Popcorn

Yield: 6 servings

Prep Time: 15 minutes

Total Time: 45 minutes

10 cups of popped popcorn
10 oz. Wilton Candy Cane Colorburst Candy Coating Chocolate
2 tablespoons Paramount Crystals, if you cannot find paramount crystals, you can use 1 - 2 teaspoons of canola or vegetable oil or shortening in it's place
½ cup of green and red M&Ms
2 – 3 teaspoons of candy cane accents

1. Pop popcorn and remove all unpopped kernels. Place in large bowl.
2. Melt candy coating chocolate in microwaveable container for 30 seconds, stir, melt another 30 seconds, stir – repeat until smooth.
3. Add paramount crystals (or oil) and stir until completely incorporated. Your chocolate should be thinner and easy to pour and coat your popcorn with.
4. Pour melted chocolate over popcorn and carefully stir until all popcorn is covered.
5. Spread coated popcorn onto wax or parchment paper or nonstick mat. Add M&Ms and any accents on top before the chocolate sets so the candy can stick to the popcorn.
6. Let set for about 30 minutes.
7. Break into pieces and serve or portion into decorative bags and tie with ribbon for an addictive gift!
