Breakfast Bowls

It’s Monday and it’s a holiday week.  Do you have company coming for Thanksgiving?  Do you have ALL of the meals planned yet?  Well, if you don’t, you’re in luck because I have the perfect breakfast that should satisfy almost everyone and can easily feed a crowd.  My daughter had these at a Relay for Life Breakfast and couldn’t wait for me to make them for her.

You start by frying up some pork sausage or bacon or ham or all 3.  That’ll get the late sleepers out of bed.  Can’t you just smell the bacon now? 

Then you cut up some veggies like red and green peppers, mushrooms and maybe even a little broccoli.  After that, you open a jar of salsa and a bag of shredded cheese.  And finally, you mix up a BIG batch of scrambled eggs.

When everything is done, you let your guests do the rest.  Let them make their own breakfast bowls.  Start with the eggs and top with everything or nothing.  It’s an easy way to satisfy the hunger of many without being a short order cook.

Breakfast Bowls

Yield: 6 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes


Breakfast Bowl Suggestions
1 dozen scrambled eggs (normally count 2 eggs per person unless you have a larger crowd then plan on 3)
1 lb of cooked meat – pork sausage, bacon or ham or a mixture of them
Chopped peppers – red, orange or green
Salsa or chopped tomatoes
Shredded Cheese


1. Fry up meat.
2. Place all ingredients in individual bowls.
3. Scramble eggs.
4. In an individual serving bowl, place eggs and top with any combination of meat, veggies, etc. Whatever you like!

Serve with a side of toast and some fruit for a hearty breakfast.

    Yum! Great idea thanks for sharing now… any ideas for the kids who don’t like eggs?

      If they like veggies, pile on the veggies and meat. The eggs would just be a bonus.
